This Mediterranean lemon chicken is simple, bright, and easy to make on a busy weeknight. Lemon, garlic, oregano, olive oil, and a little thyme give the chicken a fresh flavor without making the dish feel heavy.
It works well with roasted vegetables, couscous, rice, potatoes, salad, or warm bread for soaking up the lemony pan juices.
Ingredients
- 4 chicken thighs or chicken breasts
- 2 lemons, juiced and zested
- 3 tbsp extra virgin olive oil
- 3 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp dried thyme
- Salt and black pepper, to taste
- Fresh parsley, chopped, for serving
How to Make It
In a bowl, whisk together the lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and black pepper.
Add the chicken and turn it well in the marinade. Let it rest for at least 30 minutes. If you have more time, you can leave it covered in the refrigerator for a few hours.
Heat a large pan over medium heat. Add the chicken and cook until golden on both sides and cooked through. Depending on the size of the pieces, this usually takes about 8–10 minutes per side.
Let the chicken rest for a few minutes before serving. Spoon some of the lemony pan juices over the top and finish with chopped parsley.
Serving Ideas
This chicken is easy to build into a relaxed Mediterranean meal. Serve it with roasted vegetables, a cucumber and tomato salad, couscous, rice, or warm pita.
It also works well next to simple sides from our Mediterranean recipes, especially fresh salads, grilled vegetables, or light yogurt-based dishes.
For a slightly fuller dinner, add roasted potatoes or a small bowl of olives and feta on the side.
Make-Ahead and Storage
This recipe works well for meal prep because the lemon, garlic, and herbs keep the chicken flavorful even after reheating.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan over low heat, adding a small splash of water or olive oil if the chicken looks dry.
The marinade can also be used for fish, shrimp, roasted vegetables, or chicken skewers.
A Simple Mediterranean Chicken Dinner
Mediterranean lemon chicken is the kind of recipe that does not need much decoration. The flavor comes from a few familiar ingredients used well: lemon, garlic, olive oil, herbs, and enough time for the chicken to absorb them.
Serve it warm, with something fresh on the side and a little bread for the juices. For dessert, a slice of Olive Oil and Lemon Yogurt Cake keeps the lemon flavor going in a simple, natural way.

Is this Italian recipe?
Hi Adi, glad you asked… This recipe could well be found in south Italy areas, though I discovered it from Greek source! Lemon and herbs are common for Cyprus as well, for what I know… Thing is it’s quick to make and tasty! Thanks for commenting and be sure to stay around for more treats! @theMediterraneanLiving
