Mediterranean Lemon Chicken – Juicy, Fresh & Easy Dinner Recipe

This Mediterranean lemon chicken is simple, bright, and easy to make on a busy weeknight. Lemon, garlic, oregano, olive oil, and a little thyme give the chicken a fresh flavor without making the dish feel heavy.

It works well with roasted vegetables, couscous, rice, potatoes, salad, or warm bread for soaking up the lemony pan juices.

Ingredients

  • 4 chicken thighs or chicken breasts
  • 2 lemons, juiced and zested
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for serving

How to Make It

In a bowl, whisk together the lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and black pepper.

Add the chicken and turn it well in the marinade. Let it rest for at least 30 minutes. If you have more time, you can leave it covered in the refrigerator for a few hours.

Heat a large pan over medium heat. Add the chicken and cook until golden on both sides and cooked through. Depending on the size of the pieces, this usually takes about 8–10 minutes per side.

Let the chicken rest for a few minutes before serving. Spoon some of the lemony pan juices over the top and finish with chopped parsley.

Serving Ideas

This chicken is easy to build into a relaxed Mediterranean meal. Serve it with roasted vegetables, a cucumber and tomato salad, couscous, rice, or warm pita.
