Lemon Honey Semolina Cake
Some Mediterranean desserts feel like sunshine, and this soft lemon-honey semolina cake is one of them. Moist, fragrant and naturally sweet, it’s the kind of simple homemade dessert that brings warmth to slow afternoons or light weekend gatherings.
Why it works
The combination of semolina, yogurt, honey and fresh lemon creates a tender texture with a bright, citrusy finish. It stays soft for days, tastes even better the next morning and requires no advanced baking skills — a true Mediterranean classic.
Ingredients
- 1 cup fine semolina
- 1 cup Greek yogurt
- ½ cup honey
- ½ cup sugar
- ½ cup melted butter
- 2 eggs
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tsp baking powder
- Pinch of salt
For the syrup:
- ¼ cup honey
- ¼ cup warm water
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 180°C.
- In a large bowl, whisk together yogurt, honey, sugar, butter and eggs.
- Add semolina, baking powder, salt, lemon zest and juice. Mix until smooth.
- Pour into a greased round pan and bake for 30–35 minutes.
- Combine the syrup ingredients and pour over the warm cake.
- Let it rest so the semolina absorbs the lemon-honey syrup fully.
Tips to get it just right
- Allow the cake to rest at least 20–30 minutes before slicing.
- Use fine semolina for the softest texture.
- Add pistachios or almonds on top for extra crunch.
